Carboxymethylcellulose (CMC) is a natural polymer obtained from the transformation of cellulose into a soluble form by a chemical reaction. The most important and useful property of CMC is its ability to impart viscosity to aqueous solutions. Some applications are sauces, beverages, breading, cosmetic, personal care and pharmaceutical applications.
